Day 1 of my Cooking Challenge: Tuna Pasta Casserole

Today is the day!

The cooking project started today after getting groceries! I was planning to do a Roast meal, but we decided to go to a potluck tonight and I didn’t have the 3 hours to cook the roast…. so…. instead we made the tuna pasta casserole that only took 30 minutes.

Such a simple meal, but very tasty. You just cook up your noodles and broccoli and set them aside. Melt some butter in a pot, stir in some flour and salt, once that’s smooth you take it off the heat and slowly add milk. Return to heat and bring to a boil. Mix in the cheese and then the broccoli, noodles and tuna. Then you bake that at 350 in a covered casserole dish for 25 minutes, mix some bread crumbs with butter and spread over top. Bake uncovered for 5 minutes and you’re good to go!

It was tasty.

Can’t wait for Monday to make the roast! And keep your eyes peeled! Every day this week I will making something, (except tomorrow because we spend the day with family and they feed us!).
